Earlier today I decided to make Brioche Buns and now I am eager to share my recipe with you. These fluffy, yeasty, buttery, and slightly sweet buns carry an incredible shiny and golden crust. Not only are they the perfect burger buns, they can be additionally savored with some butter or strawberry jam.
- 20g yeast
- 200ml warm water
- 3 tbs milk
- 3 tbs sugar
- 550g all-purpose flour (Type 550)
- 1 tsp salt
- 125g soft butter
- 2 eggs
Mix the milk, water and sugar in a small bowl and dissolve the yeast in it. Let it sit for 15 minutes. Meanwhile whisk one egg until it gets frothy. Add 500g of flour, the salt and butter to a big bowl and mix it till it gets crumbly. Add the egg and milk mixture and knead the dough. Add the rest of the flour if needed. The dough has to be kneaded for at least 10 minutes or until it gets soft and shiny.
Let the dough rise in a warm place for one hour. Form 8 to 10 buns, put them on a parchment paper lined baking tray, and let them rise again for one hour. Mix the second egg with a few spoons of water and brush the buns with it. Sprinkle a few sesame seeds on them and bake for 15 minutes at 200°C or 390°F.
